Where it comes from
The grapes are grown in the picturesque Tòr Löwengang vineyard in Magrè, in the province of Bolzano. The vines, with an average age of twenty-five years, are situated at an altitude between 430 and 450 metres, with roots deep in moraine-origin soil. The soil composition, rich in clay, rock and limestone elements, gives the wine definition and a pronounced minerality. The agricultural management follows strict organic and biodynamic practices, operating in full respect of the natural ecosystem. Thanks to a limited yield, production ensures optimal ripening and meticulous selection of each individual bunch.
How it is produced
Harvesting takes place between the end of August and the beginning of September, when the bunches reach perfect ripeness. In the winery, the process begins with spontaneous fermentation triggered exclusively by indigenous yeasts. The wine then matures slowly in small wooden barrels for about eighteen months. This technical approach allows the vibrancy of the fruit to be harmoniously integrated with the elegance of the spices, ensuring a balanced maturation without forced extraction. The final result is a clear and precise glass, capable of enhancing the purest identity of the grape variety.
