Clynelish is a Scottish distillery in the Highlands specializing in whiskey production that boasts 2 centuries of history. This is where traditional whiskeys are born from the unique and very typical personality.
Originally Clynelish was founded by Stafford Marquis in 1819 with the aim of creating a market for barley produced in its land. Across the street is the current distillery that we know today, built in 1968. The old distillery for a while was lived under the name of Brora producing turbid malt, then closing definitively in the early 80's.
For whiskey production, Clynelish distillery uses water extracted from Clynemilton Burn, which flows on mineral-rich rocks. The fermentation takes place in washback (8 in wood and 2 in steel) and takes 55 hours to get a high quality fruity and aromatic wash, that is, a sort of beer to be distilled. Currently the distillery has a total equipment of 6 amphibians: 3 wash still and 3 spirit still.
An excellent example of distillery whiskey is the Clynelish 14 Years, a great mushroom of the Highlands, soft and round, with an exceptional peach balance and fruity aromas of great charm and elegance.
