Wine making | From a selection of Sangiovese grapes harvested between the 3rd and the 19th of October, the carefully destemmed grapes are vinified in modern stainless steel tanks, with maceration on the skins for an average duration of 15 8 days at an average temperature of around 26°C. |
Aging | Once the alcoholic fermentation is complete, the wine undergoes malolactic fermentation. It is then transferred to French oak barriques where it remains for approximately 12 months and is refined for a further 6 months in the bottle. |
