Wine making | Once the grapes have been crushed and destemmed, they are softly pressed in an oxygen-reduced manner and left to macerate at a cold temperature of about 14°C for one night. Alcoholic fermentation takes place in stainless steel vats at a controlled temperature. Finally, the wine remains in contact with its yeasts and fine lees for about two months. |
