Description
Grancasale is produced in the hilly hinterland of central Marche in medium-textured soil with a south-eastern exposure. The bunches, selected and hand-picked in mid-October, are brought to the cellar in small baskets to avoid tearing the grapes. Here, the vinification process takes place with cold maceration of the skins with their own must, i.e. the cryomaceration.
