Wine making | The destemmed grapes underwent a sudden drop in temperature to 16°C in a CO2-protected environment. This cooling process of the grape skin allows for a higher extraction of the anthocyanin and polyphenol content. Alcoholic fermentation occurs in steel tanks for 16 7 days at a controlled temperature of 27-28°C without exceeding 28°C. After racking, malolactic fermentation takes place. |
