Vinification |
Destemmed and gently crushed to carry out a cold maceration of 6 hours in the press: the Must isthusenriched with a greater quantity of aromas from the skins of the Merlot. After pressing, the Must is clarified. |
Ageing |
Spontaneous fermentation for approx. 10 days at a controlled temperature (15°C) until the end of alcoholic fermentation, then the maturation goes on in stainless steel. |
Pairing |
Very versatile wine, ideal with antipasti such as raw ham and melon, medium aged cheeses and charcuterie entries, but also perfect during the whole meal, especially with delicate main curses, fish, crustaceans and vegetables dishes. |
