Vinification |
The grapes are harvested when fully ripe and, after crushing and destemming, the must obtained is fermented at a controlled temperature in steel containers with targeted maceration on the skins and appropriate pumping over and delestage operations. |
Ageing |
The wine thus produced then matures for about 18 months in French oak barriques. |
Pairing |
A wine that lends itself to pairing with meat, whether seared on the grill or cooked for a long time and garnished with spices and sauces. It is splendid with game, especially furry game, and with medium- and long-aged cheeses. |
