Vinification |
Severe sorting in the winery, vatting of whole grapes destemmed by gravity using harvesting trays. Enzyming, yeasting, one week cold pre-fermentation maceration, daily punching of the cap, hot final maceration. Vatting time of 3 weeks. Manual de-vatting with the help of gravity tanks in the stainless steel pneumatic press. |
Ageing |
12 months in oak barrels, 1/4 of which are new, malolactic fermentation in barrels, then blending in stainless steel tanks for 2 months. Light filtration of 5 microns before bottling. |
