Climate |
Throughout the Médoc climate is influenced by two large bodies of water: the ocean and the Gironde, that act as regulators of the heat and create the conditions for an ideal microclimate for the viticulture. The Gulf Stream, then, gives mild winters, hot summers, long and sunny autumns. Furthermore, the continuous band of pine forests of the Landes, which extends almost parallel to the region, protects throughout the northwestern winds. |
Soil composition |
The soils are constituted by gaves gunziennes medium and fine of origin Garronese and of a thickness of from 4 to 11 m. In some cases, Graves mingle with clay. |
Harvest |
The mechanical harvesting is common practice and all the grapes are de-stemmed before fermentation. |
Production technique |
In red winemaking is often added a small amount of "vin de presse", ie the last pressing of wine, dark, tannic, which is obtained at the end of the alcoholic fermentation and after malolactic fermentation, tapped from the lees in the tank and squeezing the residue skins and pips. This process allows the wine to get more body and longevity. |
Vinification |
The fermentation takes place in vats. The use of stainless steel tanks is increasing. The duration of contact with the skins varies from one to two weeks, although some chateaux come to four weeks. |
Ageing |
In new barriques for 18/24 months. |
Pairing |
Ideal pairing with dishes of red meat, game, seasoned cheese. |
