||Soft pressing of whole grapes with a pneumatic press. Sgondo immediate wort and static sedimentation at low temperature. Fermentation at controlled temperature with selected yeast graft. Fermentation in autoclave(Charmat) 50 days fermentation at low temperature(14 °C).
