AOC Châteauneuf du Pape Blanc
||60% Roussanne, 40% Bourboulenc
||Roussane vine from “Les Esqueirons” vineyard. This plot is on the western side of the hill upon. Bourboulenc vine from “les Bosquets” vineyard. This plot is located north of the village of Châteauneuf.
||Vines are harvested manually in 50kg crates.
||Grapes are pressed and the must is put into a stainless steel tank. It is cooled down in order to facilitate the elimination of solid debris, soil, yeast and bacteria from the pulp.
||Alcoholic fermentation at a temperature of approximately 17° C (62° Fahrenheit). There is no malolactic fermentation.
||We take out the biggest wine dregs and for the ageing period we leave the fine lees in with the wine.
