||15% Chardonnay, 85% Pinot Nero
||Piedmont - the grapes come from Alta Langa vineyards at elevations of more than 300 metres a.s.l., selected for their clay and limestone-rich soil. Their grapes give outstanding structure and acidity, ideal for long lees ageing.
||The grapes come from vineyards in different areas with site climates, aspects, temperature humidity and soil types that vary from plot to plot. This range of site climates means that grapes ripen at different times so picking dates are decided individually for each vineyard. As a result, the harvest can go on for three weeks. It is a strategy that produces base sparkling wines of superior quality.
||Grapes picked by hand in small cases are softpressed before the first-pressing must ferments in steel tanks at controlled temperatures. The prise de mousse is obtained by the Metodo Classico of refermentation in bottle.
||Contact with the fermentation lees lasts for about 60 months.No liqueur d’expédition is used at disgorgement, which is carried out only with the addition of the original wine.
||A fine aperitif and equally excellent to drink through the meal.
