The foundation wine of the Bibbona estate. It is made from 32% Syrah and the remaining part is a blend of Cabernet Franc, Merlot and Petit Verdot. Insoglio del Cinghiale is a very fleshy wine, coming from the distinctive Upper Maremma terroir. The peppery characteristics coming from the Syrah make it the ideal accompaniment to game dishes, such as the local wild boar (after which it is named), roast pheasant or rich game stews.
Intense ruby with hints of purple.
The nose is of vibrant cherry and blackberry fruit and floral notes.
Full and fruity on the palate with well-balanced smooth tannins. It can be a little closed to start but then opens up beautifully in the glass.

Vinification Grapes are strictly sorted on a vibrating belt at the cellar. They are then de-stemmed and soft crushed. Fermentation takes place for 21 days at 28°C. 20% of the wine undergoes malolactic fermentation in oak barrels and the remainder in stainless steel.
Aging 40% of the wine is aged for 6 months in new and second-use French oak barriques. The wine is aged for another 3 months in bottles before release.
