The vineyards, cultivated at sea level, are situated on \u003cstrong\u003esandy and clayey\u003c\/strong\u003e soils, ideal for giving the wine a fresh and savoury character. The vines, planted in 2004 and 2019, are trained using the spurred cordon system, with a density of 6,000 vines per hectare, to ensure a balanced yield. Production, overseen by winemaker Luca Petrelli, adopts rigorous agronomic management with a low environmental impact.\u003c\/p\u003e\u003ch3\u003eHow it is produced\u003c\/h3\u003e\u003cp\u003eThe production of Oltremé rosé begins with a \u003cstrong\u003emanual harvest\u003c\/strong\u003e, carried out in the last ten days of September. In the cellar, alcoholic fermentation takes place in \u003cstrong\u003etemperature-controlled stainless steel tanks\u003c\/strong\u003e (16–18 °C) to preserve the grape's aromatic complexity. Malolactic fermentation is not carried out, in order to keep the natural acidity intact.
