Wine making | The production of Barolo Chinato flavoured wine begins Barolo wine that has completed its minimum ageing period. In terms of its characteristics, it must comply with all chemical, physical and sensory tests set out in the production specification. The process of flavouring Barolo is accomplished through a cold infusion in a hydroalcoholic solution of cinchona bark, gentian root, cardamom seeds and other lesser spices, such as vanilla bean. Sugar and alcohol are added to the wine to achieve a harmonious taste. |
Aging | After preparations, Barolo Chinato is aged for at least one year in barrels before being bottled and marketed. During this period all the aromatic elements left in the infusion come together in a harmonious sensation. The wine continues its maturation in the bottle, developing a flavour of greater smoothness and improving aromatic sensations. |
