It is made from \u003cb\u003eMoscato Bianco\u003c\/b\u003e vines. The term Passito refers to the treatment of the grapes during the harvest. The bunches of grapes are harvested, placed in crates, and left to dry slightly before undergoing the traditional production process. This drying process, which lasts about a month, gives the final product a sweeter, fuller body. The grapes are then taken to the cellar, pressed, and fermented at a controlled temperature. The wine is then aged in stainless steel tanks for approximately two months.
