Islay is the undisputed queen of Single Malt and is home to several distilleries. The Caol Ila distillery is located in a picturesque inlet into which flows a stream that collects spring water from the \u003cb\u003elimestone rocks\u003c\/b\u003e of Loch nam Ban. Founded in 1846 and passed through several owners, the distillery is today run by the Stitchell family, who still use \u003cb\u003emalted barley\u003c\/b\u003e in nearby Port Ellen. The \u003cb\u003eSingle Malt 12 y.o.\u003c\/b\u003e was only released in 2002, while previously the spirit was used in famous blends such as Johnny Walker. Compared to other bottles from the Caol Ila distillery, the \u003cb\u003eclassic 12 year old\u003c\/b\u003e is easier to drink and is also more readily available. A smoky but not overly so \u003cb\u003eScotch whisky\u003c\/b\u003e, the \u003cb\u003eCaol Ila 12 year old\u003c\/b\u003e aged in oak casks has a measured peaty charge and a less spicy structure than the other spirits produced on the island of Islay, Lagavullin and Laphroaig above all.
