Opere Trevigiane DOC Serenissima, presented by Villa Sandi at Vinitaly fair in 2015, is the first product "Metodo Classico" according to the specifications of the new DOC Serenissima, created in 2011.

土地的組成 Depending on the hilly areas, the soils have a volcanic or sedimentary origin. Thanks to the crumbling of rocks, this kind of soil has a widespread presence of soil skeleton that allows excellent drainage of rainwater.

釀造 Grapes are put into the pneumatic press and the must obtained from soft pressing, after an initial racking, is placed in temperature-controlled tanks, where alcoholic fermentation takes place at a temperature of 17-19°C. The wine is then left to mature until the following spring.
陳年 Bottling takes place after creating the cuvée by blending the two types of wine and dosing the yeasts selected by Villa Sandi. The bottles are then stacked in the oldest underground gallery of the winery at a constant temperature and humidity. The bottle fermentation takes place with a subsequent maturation on lees for at least 24 months. After this period, disgorging takes place and, only after two months of rest, the sparkling wine is ready to be marketed.
