After harvesting, the grapes are sorted on a vibrating table to remove dried grapes, leaf residues and stems. Then they move to another sorting table to remove unripe, damaged grapes or grapes showing signs of rot. The grapes are lightly pressed to avoid the risk of oxidation. |
釀造 |
Fermentation starts slowly and naturally, using native yeasts. |
陳年 |
Part of the resulting wine is aged in oak barrels, the rest in vats, for 12 months. |
匹配 |
It pairs well with prawns and lobsters but also with chicken. |
