Apollo, the god of music, armony and solar light in the greek-roman tradition, but wise healer and prophet as well.

Intense hints of ripe fruit that refers to blackberries and blueberries accompanied by delicate notes of vanilla and toasted.

收成 Manual harvesting in boxes in the second half of October, destemming and crushing of the grapes.
釀造 Fermentation and maceration at a controlled temperature for 10 days. Extraction by pumping over, drawing off, soft pressing and separation of the fecund wine.
陳年 After malolactic fermentation and subsequent natural limitation, the wine is transferred to barriques for 6 months. At the passage in wood there is a pause in steel tanks and bottling for a further phase of evolution in the bottle.
