||It takes place in autoclaves and is designed to preserve all the fragrance and aromas typical of the vine.
||It goes superbly with desserts, such as the classic Langhe hazelnut pie or apple and pine nut pie, lemon pie, fruit puff pastries and the traditional Christmas panettone. It is, however, very special and evocative when combined with mature and slightly spicy cheeses.
