The grapes, harvested in the vineyard after careful selection, are destemmed and passed through the optical selector. After pressing, the must is fermented in 50 hl truncated cone barrels with maceration on the skins for about two weeks. |

This is followed by a period of maturation of at least 30 months in medium-sized oak casks, with a small fraction being raised in barriques. Fundamental to the integration and harmony of the aromatic and structural components is the subsequent refinement in glass for over nine months before release. |

As concentrated and textured as it is, it is a wine that is naturally suitable for pairing, especially with soups with strong flavours, pasta dishes with game sauces, meat dishes that are cooked over a long period of time or that use spices and herbs. Formidable with medium-long aged cheeses. |
