Collavini Collio Blanc Fumat Sauvignon 2016
From Sauvignon grapes grown on the Collio’s characteristic marl and sandstone soil. The grapes are picked early in the morning and left to macerate at low temperature for a whole night. Fermentation, which lasts for about two weeks, is in steel at rigorously controlled temperatures. The wine stays on the fine lees until maturation is complete.
