||The Franciacorta Millesimato Dosage Zéro Castello Bonomi is the great challenge of the Chef de Cave: this Franciacorta combines the search for perfection in the best vintages with the naturalness of a choice of cellar that excludes any compromise. A sparkling wine without the addition of sugar that determines the maximum expression of the territory it belongs to: Monte Orfano.
||The pressing is soft to extract only the must flower. The Pinot Nero, after the first fermentation, matures for about 8 months in temperature-controlled steel tanks. Afterwards it is mixed with Chardonnay which has fermented in small oak barrels for about 8 months.
||This Cuvée, after re-fermentation, matures for over 80 months before disgorging and then refines further in the bottle to achieve perfect balance.
||It is recommended to eat it throughout the meal with crudités of fish and crustaceans or with Norwegian stockfish. Excellent with seabream carpaccio or with a scampi risotto. Aphrodisiac with oysters.
