釀造	Soft pressing of grapes. The static decantation and fermentation at controlled temperature follow.
陳年	In temperature-controlled stainless steel tanks in contact with the noble lees. The second fermentation occurs in an autoclave at a controlled temperature with selected indigenous yeasts for about 150 days. About 3 months of bottle ageing.
