Perseval-Farge is a small champagne house of the Montagne de Reims, entirely included in the prestigious Premier Cru of Chamery. It is led by Isabelle and Benoist Perseval, who represent the fifth generation of the family, founded in 1808 by the ancestor Jean Baptiste Perseval. Great attention, both in the vineyard and in the cellar, have always characterized the activity of the Perseval, today also aimed at the protection of the territory and the ecosystem, for this certified as HVE3, that is as a "high environmental value" activity. All this concretely translates into the preservation of old vineyards, in the refusal to resort to invasive practices in favor of the integrated struggle in the vineyard and in the choice to use minimum quantities of sulphites, with a view to a more collaborative and direct relationship between the nature and the work of man.
The 4 hectares of vineyards of the Perseval family are divided into 6 lieux-dits within the Premier Cru of Chamery, famous for the consistency of sand in the ground. This peculiarity gives a sharp and austere freshness to the wines produced in this terroir. Alongside the three classic vines of the region, there are also old and forgotten varieties, such as Arbanne, Petit Meslier and Fromenteau. The Perseval family, convinced that wine should come from the vineyard and, above all, from the terroir, has elaborated a clear vision of the entire production process and summarizes its mission: "elaborate champagne without make-up, without arrogance or extravagance; that have a strong energy and great freshness ". To do this the vinifications are usually made of wood, for the assemblies at least 40% of vin de resèrve is used and, in the bottle, the refinements on the yeasts are prolonged for over 4 years.
