The Maison is located in the small and charming village of Chigny les Roses, right in the heart of Champagne between Reims and Epernay, with one of the oldest and deepest cellars in the Region (they go down for more than 30 meters underground), excavated on three levels and characterized from three different architectural styles: Gothic, Renaissance and Roman. Here are all the ideal conditions for resting the bottles on the yeasts, thanks to the low and constant temperatures.
The Cattier family has owned the vineyards since 1625 and has been processing and marketing champagne in its own name since 1918. There are 30 hectares of vineyards in the prestigious Montagne de Reims, almost entirely classified Premier Cru, and annual production is around one million bottles. 60% of which exported to 70 different countries.
In 1951 Jean Cattier bought the precious Clos du Moulin, 2.20 hectares of lieu-dit classified as Premier Cru, from which the cuvée de prestige of the maison will be born later. To be honest, there are very few champagne that can boast of the appellation clos, a term mainly used in Burgundy to indicate a vineyard with very high quality capacities, fenced and bordered by a stone wall; here, unfortunately, the wall was destroyed during the two World Wars and with him the mill from which the clos takes its name; nevertheless, the name remained.
Between 1981 and 1984, Jean Cattier decides to replant this vineyard with Pinot Noir and Chardonnay in equal measure, but it is his son Jean-Jacques who realizes his potential: he enhances it in a label that is the maximum expression of Cattier. Moreover, instead of millesimarlo as it would have been in some ways natural, Jean-Jacques decides to assemble from time to time the three best vintages, which are regularly denoted on the back label. Of Clos du Moulin, no more than 25,000 bottles are produced annually, all of which are exclusively numbered, and habillage has recently been reviewed and the dosage dropped from 10 to 8 g/l.
