收成	By hand, with small crates in the second decade of October.
酿造	Grapes are destemmed and gently crushed to preserve their integrity. Maceration in steel vats for 10-14 days with manual pumping-over of the must. Fermentation is spontaneous with indigenous yeasts.
陈年	Before bottling, the wine rests for 12 months in stainless steel.
