收成 In mid-October.
酿造 Grapes are first selected and dried in plateaux for 2 months. The grapes are destemmed, pressed and vinified with délestage followed by alcoholic and malolactic fermentation for 15 days in vertical stainless steel vats.
陈年 The wine is left to rest for 2 years in Allier tonneaux and barriques and blended for the final year in 20-hectolitre Allier oak barrels. A year of bottle ageing follows before marketing.
