Collavini Ribolla Gialla Spumante Brut Millesime 2019

The 'Ribolla' is the wine that has witnessed and participated in the history of the Friulian people over the last seven hundred years. The first document attesting to its existence dates back to the Middle Ages, way back in 1299, and refers to a sales contract by the notary Ermanno di Gemona, a document tracked down by Professor Perusini. Many synonyms have accompanied this vine over the centuries: Rebolla, Ribuele, Rabuele Zale, Rebula (in the Slavic part of Collio).

	Perlage Lively, fine and persistent.
	颜色 Bright, straw yellow with greenish reflections.
	香气/花束 Delicate and fine olfactory delight, with aromas reminiscent of nectarine, white figs and green apple, mingling with velvety and mineral notes.
	味道 On the palate, it is very fresh, rich in structure, with infinite nuances, including citrus and long aromatic persistence.

Pairing

An exceptional wine as an apéritif. It accompanies shellfish and fish dishes. It also excels as a wine for the whole meal, even if red meat and game.

酿造	Gentle crushing of the grapes is followed by the natural settling of the first must for a whole night. The first fermentation, at 14°C, occurs partly in steel and in barriques. The following spring, the Ribolla Gialla is re-fermented for three lunar cycles in large horizontal autoclaves at 12°C.
陈年	Ageing on the lees for 28 months. This is followed by bottling in the complete absence of oxidation. Another eight months in the bottle are necessary to complete the ageing process. Finally, the bottles are packaged and manually concealed under an original yellow tissue as if to preserve all the love that skilful hands have been able to create in three and a half years of work.
