收成	The vineyard lots are harvested at different times to ensure optimal natural acidity and moderate alcohol levels.
酿造	The whole berries are hand-picked in small fermentation boxes and 225-500-litre barrels. The batches from each vineyard are treated individually. Fermentation and maceration last 28-30 days with wild yeasts. Then, alcoholic and malolactic fermentation occurs in barrels. The wine undergoes active bâtonnage to protect it and drastically reduce the amount of SO2 required.
