||Preparation of the cuvée in the Spring following the harvest. Second fermentation in the bottle and subsequent ageing in contact with its own yeasts for at least 24 months, followed by a further 2 months after disgorging. The lower pressure in the bottle (5 atmospheres at the end), a characteristic of the Satèn type, confers elegant creaminess.
||Excellent as an aperitif, it is ideal with delicate risotto and fish dishes. Try it with raw ham from Sauris, Parma or San Daniele and cheeses that are not too mature.
