||The grapes are destemmed and cooled, then softly crushed in absence of oxygen. Alcoholic fermentation: 15 days, in steel tanks, at low temperature (14-15 °C).
||In steel tanks, 8 months on the fine lees at 10-12 °C, the 10% of the mass remains 8 months in 600-liter French oak tonneaux. Bottle ageing: at least 6 months at controlled temperature (18 °C).
||Incomparable with spaghetti ai ricci di mare (sea urchins).
