||Hand-picked, divided depending on the ripening level of the different sections during the last weeks of September and the first week of October.
||Soft systems for the grapes’ reception, quick and cold maceration, low temperature fermentation, for each of the different particles.
||On its own yeasts into steel vats for 6-7 months. Bottling: takes place in March and the wine is released after 2/3 months of aging in the bottle.
