Known worldwide, Amarone is the noble wine of Verona. The clusters dedicated to the production of Amarone must be completely undamaged, with berries not too serried, so as to allow the passage of air during the delicate process of drying that takes place on special racks, which are constantly monitored. During this period the grapes – Corvina , Corvinone , Rondinella and Oseleta – dehydrate, thus increasing their sugar content and gaining flavor. After the crushing and the fermentation, the aging process continues in oak barrels for at least three years.
