Origin In the hills in the northern area of Verona.
Soil composition Clayey, limestone.
Harvest By hand, with small crates. Grapes are dried for about 3-4 months in dry, well-ventilated rooms.
Vinification Once grapes have reached the ideal degree of dryness, it is pressed and fermented in temperature-controlled steel tanks. Once fermentation has started, it continues for about 30 days, allowing the wine's high alcohol content to develop fully.
Ageing After a period in concrete tanks, where it undergoes malolactic fermentation, the wine is transferred to large oak casks of medium and large size for about three years. After bottling, the wine refines for at least 6 months.
