Harvest By hand, with small crates.
Vinification After a soft pressing, the grapes undergo a long maceration. Alcoholic fermentation occurs spontaneously with indigenous yeasts without using sulphites, with careful control of maceration time and temperature.
Ageing In small oak barrels for a minimum of 18 months in contact with its indigenous yeasts.
