|Composition of the land
||Soil is mixed with calcareous tufa layers of medium consistency.
||The grapes are de-stemmed and gently pressed. The maceration takes place for about 14 days; during this period, must complete alcoholic fermentation at a temperature not exceeding 27 ° C.
||The wine is then transferred to oak barrels where it remains for about 9 months. After these ores period, it is bottled and aged for a further 4 months.
||Ideal with red meats, game and aged cheese.
