Climate |
Thanks to excellent weather conditions, the vegetative growth cycle of our vines manifested an optimal development during the ripening process. The month of September was very important to ensure good ripening, thanks to the temperature contrast between day/night, essential for the further ageing of the wine. The 400 ml. rainfall was perfectly spread during the months of the growth cycle. It was an ideal year for red varietals, obtaining wines with fine tannin structure and length. |
Harvest |
Manually, in boxes of 15 Kg from 10th to 14th October 2005. |
Production technique |
Treatments: no clarifying nor filtering. Ageing: once decanted, and the malolactic fermentation takes then partly place in oak barrels. Barrels: new Russian oak barrels (made by Seguin Moreau) |
Vinification |
Fermentation in 10,000 Kg stainless steel tanks, 11 days at 30 ºC. Macerations: daily remontage and pumping over to obtain the desired balanced of fruit and tannin extration, and 14 days skin contact after fermentation. |
Ageing |
Racking: the first 2 rackings every 4 months, then every 6 months. Total ageing: 23 months. |
Pairing |
To pair with aged Scotch fillet or Grillet T-bone steak with roasted shallots. |
