||After harvesting the grapes, for a 5% surmature, they are separated from the rasp. The juice and the pulp undergo a cold maceration, so a slight pressure that allows the separation from the skins. 30% of the must is fermented in oak barrels, the remaining in steel tanks. The wine is left to rest about three years on yeasts and a bottle year.
