Vinification Alcoholic fermentation for 7-8 days in rotary fermenters with temperature control. Malolactic fermentation in barriques.
Ageing After ageing in French oak barriques for 22 months, the wine is transferred to steel tanks where it remains for 3 months before bottling. It then follows further 12 months of ageing in the bottle before marketing.
