Grapes are destemmed followed by maceration and fermentation for about 12 days in vertical vats. |
Ageing |
The wine undergoes drawing-off, pressing and malolactic fermentation followed by racking into partially new barriques. Maturation for 15 months. It is finally racked and bottled after a light filtration. |
