True to its homeland, Alta Langa ZERO scales the daunting peaks of absolute quality, tempering passion with technique to find equilibrium in excellence. Obtained from Pinot Nero (85%) and Chardonnay (15%), Alta Langa ZERO is undosed, in other words it has no liqueur d’expédition. After sojourning on the lees for about 60 months, Alta Langa ZERO is Cantina Maestra’s supreme Metodo Classico sparkling wine.

Colour

The straw yellow is star bright and the perlage of tiny bubbles lingers unhurriedly.

Bouquet

Complex, elegance fragrances of lime blossom, honey and ripe white-fleshed fruit shade into yeast-veined fresh-baked bread.

Flavour

Vigorous structure is sustained by good acidity as aromas of flowers, fruits and yeasts alternate through to a long, minerally finish.

Pairing

A fine aperitif and equally excellent to drink through the meal.

Origin Piedmont - the grapes come from Alta Langa vineyards at elevations of more than 300 metres a.s.l., selected for their clay and limestone-rich soil. Their grapes give outstanding structure and acidity, ideal for long lees ageing.
Harvest The grapes come from vineyards in different areas with site climates, aspects, temperature humidity and soil types that vary from plot to plot. This range of site climates means that grapes ripen at different times so picking dates are decided individually for each vineyard. As a result, the harvest can go on for three weeks. It is a strategy that produces base sparkling wines of superior quality.
Vinification Grapes picked by hand in small cases are softpressed before the first-pressing must ferments in steel tanks at controlled temperatures. The prise de mousse is obtained by the Metodo Classico of refermentation in bottle.
Ageing Contact with the fermentation lees lasts for about 60 months.No liqueur d’expédition is used at disgorgement, which is carried out only with the addition of the original wine.
