Vinification |
Vinification takes place in bare cement vats with an open cap and a fulling system that allows the grape skins to be submerged without the use of pumps. After fermentation, the wine remains in contact with the grape skins for a period of 15-30 days depending on the year and the characteristics of the grapes. |
Ageing |
Cask maturation lasts from two and a half to three years. It begins in 5-7 hectolitre tonneaux and generally ends in 15-40 hl grain casks. Before bottling, the Brunello returns to bare cement vats. Racking, which takes place twice a year, makes the Brunello clear and bright and it goes into the bottle without mechanical filtering. Refinement in the bottle lasts from 6 months to 1 year. |
