Vinification	In the winery, the grapes are cooled down before crushing, and only the first must is collected. The first and second fermentations are carried out only with indigenous natural yeast.
Ageing	6 years on the lees. The Pinot Noir remains in steel vats until bottling, while the Chardonnay, after the first fermentation, ages for 7 months in French oak barriques.
