||Sandy, stony with ample ocean sidements.
||September 5Th. THe grapes are handpucked, selected and kept separate according to their vineyard location.
||In the winey they are cooled down before crushing and only the free fall juice is beeing collected. First and second fermentation with indigenous natural yeast. Afeter the first fermentation, the wines stay to mature until May after haverst, then are blended and bottled for the second fermentation.
||Almost 4 years on the lees in bottle. Riddling: by hand for 4 weeks.
||Ideal as aperifitf, appetizers and fish.
