Sandstone soils alternate with marl, ferrous and limestone loamy soils and gravel deposits. |
Vinification |
The fermentation of must takes 25-39 days in temperature-controlled stainless steel tanks at 27-30°C. |
Ageing |
Malolactic fermentation also takes place in steel tanks. Half of the wine then ages for a further 18 months in barriques and oak barrels, 50% of which are new and the remaining 50% of second or third passage. |
Pairing |
It perfectly pairs with pasta, grilled meats, steak, lamb, mushroom dishes, game birds, and "Fiorentina" T-bone steak. |
