An elegant sparkling wine and a bottle that looks like it should have perfume in it. A small, gorgeous label with just one precious word written on it: The word the old folks used to use around here to call the children. This sparkling wine is the child of our grandfather Otello and is dedicated to his náni, his children Bruno and Giovanni. They were the ones who made Cantine Ceci into what it is today.

Crystalline straw yellow.

Bouquet

Intense, fruity, fragrant, and aromatic with notes of white peach, golden apple, citrus, and a brioche finish.

Flavour

Intense and lingering in the mouth, silky and smooth, with fruit and citrus notes reminiscent of the nose.

Pairing

Excellent with delicate Emilian salumi and a perfect accompaniment for fish dishes and shellfish, even raw.

Vinification The wine is the fruit of the soft pressing of the grapes, thus obtaining the must from which the marc is separated after about an hour. Fermentation is temperature-controlled, the base wine then rests until December-January so that it naturally cleanses itself of impurities.
Ageing In French oak barrels. Refermentation occurs thanks to the natural sugars present in the must.
