Vinification |
The grapes, selected in the vineyard and harvested by hand, are destemmed and gently pressed. The must thus obtained starts to ferment spontaneously in 53-hl conical wooden vats. Once alcoholic fermentation is complete, the wine remains in contact with the skins for about 20-25 days before being racked into concrete vats to allow malolactic fermentation to begin. |
Ageing |
50% of the wine ages for 18 months in Slavonian oak barrels, and the remaining 50% ages in 225-litre second and third-passage barriques. |
